Salad zucchini with mushrooms for the winter
Among the ingredients in this salad, first, of course, the zucchini, we add mushrooms, rhubarb, Apple, carrot and onion. And that’s just the basic salad ingredients. In addition there will be added spice, seasonings and spices that will make our salad with the usual zucchini is very rich and delicious.

Preparation of salad:
Take the zucchini, preferably young, but if they are with seeds, they need to be removed. Peel the zucchini peel and cut into small dice. The zucchini in this salad are the main base ingredient.
Put a deep saucepan on the stove, pour in vegetable oil, a little heat. Put shredded zucchini in the skillet, sauté for 10 minutes.
Then throw chopped zucchini to the onions.
Cut carrots into small dice and put in saucepan to the vegetables.
Next send to this mix chopped apples (without skin and seeds) and stalks of rhubarb (peeled).
Mushrooms cut into plates and put into the pot. Periodicheskaya squash salad in the cooking process, so it does not burn.
Add salt and sugar, spices to taste, in my case it’s thyme.
Now put tomato paste ( you can substitute thick tomato juice) and pour some water.
Lettuce simmer for another 15-20 minutes on low heat.
At the end of quenching add the garlic and pour in the vinegar. If you will prepare this salad not squash the winter, the vinegar can be added. It is mainly needed here as a natural preservative.
Chopped greens, put in only the portion of salad that will immediately be served. In salad, which will be stored in the Bank, greens place, because over time it will darken. It would be better to make so: in the winter when you open a jar of squash salad, with a knife to chop fresh herbs and sprinkle her salad.
Ready salad spread out in sterilized jars, roll up cover. If you fear that the Bank can be blown up, sterilize jars of salad (15 minutes for half-liter cans).
