Fried Japanese Tofu Recipes

To make these fried Japanese tofu recipes you will need:

1 – 2 blocks of extra firm tofu

Potato starch

Oil (I used olive oil)

Sweet rice wine

Soy Sauce

Other ingredients you may use are scallions, mushrooms, ginger, dashi, daikon radish, Nori

My Happy and Delicious Accident

My son decided a year ago to cut out meat and dairy products from his diet. He was living on his own so I didn’t have a need to make vegan or vegetarian food.

Now that he is home I search recipe blogs for yummy vegan dishes for him.

The other night I made something tasty on my own with what we had available – tofu, sriracha sauce, and soy sauce without a recipe.

I squished all the water out trying not to break the tofu. The paper towels were soaking wet. Once it was as dry as I could get it I sliced it into cubes – probably 2 inches each.

In a separate bowl I put sriracha sauce, soy sauce, garlic flakes, and some seasoning. After mixing it and putting some gloves on I placed the tofu cubes into the sauce. I gently moved the pieces in the bowl to make sure I covered each piece.

While I let this sit I heated some olive oil in a frying pan on low heat. Once heated I added the pieces one by one placing a lid on top.

After about 3 – 6 minutes I flipped them – they were brown on one side. Be careful and keep the heat low or use protective gloves because the grease does splatter.

I removed them from the fire a few minutes later.

Next, I reheated some rice with soy sauce and sriracha along with scallions, thinly sliced carrots, and broccoli.

Finally, I placed the rice on the plate with the fried tofu on top. I tried a bit myself and my mouth did a happy dance. I actually made something yummy.

My son ate his meal with enjoyment.

What did I just make? I know from eating at Japanese restaurants that they have something like this so I searched online.

It’s called Agedashi Tofu. You make in a similar way except you add a coating to it.

Below are a few mouth-watering recipes I found online.

1. Agedashi Tofu by Nami of Just One Cook Book

She uses soft tofu in her recipe along with vegetable oil, potato starch, dashi (kombu dashi for vegetarian – she has a homemade recipe on her blog), mirin, soy sauce, scallion, daikon radish and Japanese seven spice.

Included is a step-by-by step photo tutorial as well as video tutorial.

She suggest squeezing the liquid out of the tofu for 15-minutes. I think I may have done 5-minutes so I’ll have to try getting more of the water out next time.

After chopping the onions and grating the radish (and making the sauce) she deep fries the tofu. Agedashi is crispy on the outside and creamy on the inside. Read the rest of her tutorial as well as some interesting tidbits about this appetizer on her blog Just One Cook Book.

2. Deep Fried Tofu by Bebe Love Okazu

This recipe looks very simple.

– drain the tofu

– coat it with potato starch

– fry it

– make sauce and cut up vegetables

– serve

3. Fried Tofu in Dashi Sauce by Natsuko Kure

For this version you’ll need soft tofu, potato starch, Enoki mushroom, chives, salad oil, Dashi stock and Dashi flakes (make sure it is vegetarian), soy sauce, mirin, and Nori seaweed.

Make dressing with vinegar, olive oil, salt and pepper. Combine the dressing with the salad.

Cooking Fish Recipes in a Slow Cooker

Even if you frequently use your slow cooker to make beef, pork or chicken recipes, you might have completely overlooked fish dishes. Fish is known for its ability to cook fast so perhaps you thought slow cooking was not an option for it. Actually using a crockpot to make your fish and seafood recipes helps to keep the subtle fish flavor intact because no moisture is lost during the slow cooking process and the heat is kept low.

You can use fish in casserole, stew, soup and pasta recipes. You can also poach or steam it in the crockpot. To poach fish, you just need to add it to the crock pot, cover it with water, stock or wine and add your chosen herbs or spices. Parsley and bay leaves are especially good for fish dishes. Poaching might only take forty five minutes, depending on the type of fish you use and its thickness, so keep an eye on it. If you are using flat fish you can braise it. Roll it up before adding it to keep it in one piece and keep the flavor locked in.

How to Cook Shellfish in a Crockpot

Shellfish does not combine well with long cooking times, so if you want to add some to a stew or soup recipe, add it near the end of the cooking time so it can warm through. Shrimp can be added to crockpot chowders, soups or stews. You can either add them in their shells or de-shelled. Gumbo and jambalaya are slow cooker recipes and you can add some tasty shrimp to these, whether you make them on the stove or slow cook them. Clams and mussels are good for making stews, especially when you use a tomato or white wine based sauce.

Slow Cooking Times for Fish

Some meat dishes, especially when you are using tough cuts, can take up to ten hours to tenderize in a crock pot but fish cooks faster, which is why slow cooker recipes for fish usually only need three or four hours. Leaving the fish in the crockpot when it has finished cooking can dry it out so this is not something to leave in there all day while you are out. You will need to serve the fish as soon as it is ready.

You can cook steaks from big fish like mackerel, salmon, haddock and cod. You would not be able to fit a whole one of these fish into the slow cooker but the steaks cook well. If you have a whole fish and it is very big, you can chop your own steaks from it or get a fishmonger to do it for you. Flat fish tend to be smaller in general than these bigger species, so you can cook a whole plaice or sole. The flesh of these fish is not muscular since they are not very active. This means the flesh will be delicate and soft when it is cooked.

Grilled Salmon Recipes

I am going to share here two of my much loved grilled salmon recipes and some tips for beginners in the art of grilling.

Salmon is a really delicious on grill. Salmon is an excellent source of protein and omega 3 fatty acids, selenium, niacin, vitamin B12, phosphorus, magnesium and vitamin B6. Fatty acids are essential for human health but because they cannot be made by the body, they must be obtained from foods. My grandmother used to say that what is good for your health usually tests terrible. I’m sure it’s not true in case of salmon. Salmon is also quite easy to grill even if you are not an experienced cook.

Using tips presented below one can be sure of his success as a cook.

* Leave the skin on the fish. It will prevent charring the meat.

* Brush the salmon with olive oil. It will bring out the taste and will not let the fish dry out. You can even brush it again during the cooking.

* Season to taste according to the recipe.

* Prepare the grill. Oil the grill racks with some olive oil.

* Cook the fish turning once or two during. Usually it should take 7 to 10 minutes.

* When the fish is ready it flakes when pressed with a fork.

If you are looking for some easy to cook and tasty recipes you can try one of these.

Grilled salmon – very easy, but in this case less is more, trust me.

Ingredients:

* 4 pieces of salmon

* lemon juice

* olive oil

* butter

* salt to taste

Preparation:

Massage the salmon with lemon juice on both sides. After 15 minutes, massage the salmon with olive oil. Brush the grill with olive oil. Grill the fish 8 to 10 minutes on both sides. Serve with a slice of butter on top.

Grilled salmon wit apples and peaches – not that easy as a first recipe, but really not difficult.

Ingredients:

* 4 salmon fillets

* 2 apples

* 2 peaches

* lemon

* 2 teaspoons of butter

* some mozzarella

* 4 tablespoons olive oil

* 2 crushed cloves of garlic

* salt and black pepper to taste

Squeeze lemon. Mix up olive, lemon juice, black pepper and garlic. Rinse salmon fillets and marinate. Cut fruits into small bits. Put fillets on buttered foil. Put fruits on the fish and add some mozzarella on top. Cover everything with foil. Put on grill for 20 minutes.

Delicious and Easy Vegetarian Recipes

I once had a fantastic friend who would have done anything for me.

The sort of person who, if you admired her clothing would want to give it to you.

One night we attended a dinner party in her very tiny flat. The room was so tiny that we were almost sitting against the walls with all rooms in close proximity. We had not met some of the people before and would have preferred to make a good impression.

I had the misfortune to be going through a phase of not wanting to drink anything other than fruit juice. Very silly. Being the very thoughtful person that she was she had prepared me a large glass of the most delicious pure plum juice… here read – prune – same family. Then followed a large dinner of beans, and vegetarian food in abundance.

It was not long before it took effect.

Have you ever felt so bloated and full of wind that you dare not move a muscle without embarrassing yourself and everyone in sight? Even worse, the bathroom in full earshot of the rest of the dinner guests, half of which we had not met before. I tried in vain to contain this new threat to my demeanor and eventually excused myself so I could go out on the balcony “to get some air”.

More like get rid of some air.

Unbelievably, everyone arose too and trudged with me out to the balcony.

I was almost desperate by this time and the cramps were extremely severe and I decided I was either going to explode or visit the bathroom. Safe now you would think with everyone on the balcony. Wrong! They all followed me inside again. Deciding that embarrassment was the lesser evil than exploding, I gingerly went in and closed the door and leaning against the wall I tried to stifle the sound of the ever increasing wind shift before venturing in the direction of the plumbing.

Wind like you would find a severe gale or extremely efficient wind tunnel.

You guessed it.

The stifling did not work and the thin walls seemed to act as an echo chamber.

Depth sounder had a whole new meaning and those people we had never met before suddenly knew more of me than I wanted right at that moment. I could hardly crawl out of that bathroom for embarrassment

That was the beginning of my quest for a different focus to my vegetarian food, for quick, easy vegetarian recipes that would allow me to entertain with ease and feel at ease too.

I am no longer totally vegetarian and love to cook all types of food and recipes can taste even better for some creative additions. My recipe collection of easy vegetarian recipes has evolved over time with some very boring meals in the beginning to some truly luscious and scrumptious food that was mouthwatering and memorable.

Simple, quick and easy vegetarian recipes can often add years to your life and dollars to your purse.

Some recipes are from my mother who would often cook “meatless” meals before sit was trendy as we could not afford meat and when asked the recipe she would look puzzled and say it was just out of her head.

Ideas and favorite recipes for fast meals and delicious finales

Makes everything taste delicious and is very quick and very easy to do. You may want to make a double lot and keep in the fridge covered. This is uncooked. Quantities depend on how many people you want to serve so add more or less than recipe)

Cut 4 Tree tomatoes in half scoop out the flesh and chop up finely Add either 1 spring onion, scallions or a small amount of chopped onions or shallots Add brown sugar around a desert spoon full and half a squeezed lime

Mix everything together and leave aside to absorb the flavors.

This salsa is delicious on vegetable patties, fritters, quiche, mashed potatoes and steak for those who are not vegetarian. This recipe can also be made with either tomatoes or peppers and taste delicious too.

Peanut Dipping Sauce

A quick and easy to make delicious and yummy sauce to serve with raw vegetables, grilled vegetable patties, vegetarian Satay sticks, mashed potato or make thinner as a salad dressing or thicker as a dip.

To make Half a cup crunchy peanut butter – 1 Tablespoon sesame seed, 2 cloves crushed garlic, 2 Tablespoons soy sauce, Juice of 1 lemon, 1 cup of water or coconut milk. Method Combine the ingredients in a pot and stir over moderate heat until dipping consistency. Thin with extra water if you require or leave thicker as a dip. Delicious and real easy.

Potato Patties

This is so simple its almost a joke to put it in here with these easy vegetarian recipes

Grate several large potatoes, squeeze out some of the liquid or it will go squelchy. Cut up one onion & chop or grate and add spring onions,shallots, or chives Add parsley, and any other herbs you have around Drop in 2 eggs (organic naturally) and mix everything together Add salt and pepper Drop spoonfuls onto a hot pan and cook. This is delicious with the salsa above and to make even more delicious add feta cheese, either in the mix or sprinkle some on top.

My latest piece-de-resistance is a stunningly simple chocolate sauce that makes any food taste like the latest chef’s invention.

After you have cooked your patties or fritters, add a little stock to the pan, melt a small amount of butter, or margarine although butter will give a better flavor. Add about two rows of dark chocolate over a low heat. Stir this slowly and add wine if you wish (is optional) and Chili gives it a bite and depth. Also optional as not everyone likes Chili Serve. Mint is a good addition. This sauce takes an ordinary meal into a gourmet delight. Just make sure you only make the amount you need at the time or it is ultra easy to scoff the lot.

Luscious Endings to finish your vegetarian banquet

Quick Pineapple dessert

Take yogurt, – one serving each person, and a can of crushed pineapple Whip it all up and put in the freezer to set. Serve with fresh yogurt and if you feel decadent grate some chocolate on top or garnish with frozen grapes.

Quick and easy Blackcurrant yogurt dessert

Best in tall dessert cups or glasses as this looks appealing. Layer yogurt, sliced peaches and more yogurt Drizzle over blackcurrant syrup and top with a few peaches Serve with a wafer biscuit or ginger nut biscuit.
